Well I have been canning straight for almost a month now.. .hence the neglected blog. My tomatoes took their sweet time turning red.. but when they did watch out!! Holy smokes must have gotten about 60 lbs of them… all nice roma paste type tomatoes.

Still have to do apples… but they are just looking at me…and I am looking back.. My cupboard is PACKED to the gils. My refrigerator is full of pickles, goats milk and homemade root beer. Can you say I need another refrigerator!!
We also froze all that nice corn!
I found this recipe ( and modified it a bit) while trying to use up alot of Cucumbers and Tomatoes! Very Good!
Tomato & Cucumber Salad
2 T balsamic vinegar
2 T red wine vinegar
1/2 teaspoon sea or kosher salt
2-3 cloves garlic, minced
10 fresh basil leaves
5 fresh oregano leaves
3 cucumbers
2-3 tomatoes
1/2 C Olives
1/4 C Feta Cheese
Slice tomatoes into wedges, being careful not to crush and lose juice. Place tomatoes, olives and cucumbers in salad bowl and sprinkle with sea salt or kosher salt.
Whisk dressing well and pour over vegetables

I have been saying that the corn would beat the tomatoes….well we got one red tomato, then we got5 ears of corn. Oh…man it has been too long since had homegrown corn. The taste was so good I could have eaten 3 ears!
We have been waiting… and Alyssa wanted to help me…as she has never seen corn be harvested or shucked. We had the water boiling and ready before we picked it! Then FAST into the pot!
Like corn flavor plus! No we have to wait for the other ears to ripen!!
